| Location : Jeff's RecipesQuick Mint Chocolate Fudge
The Story:
My friend Will's 26th birthday was on 7/7/2007 and I asked him, "What do you want me to make for you?" After a few minutes, he came up with "Fudge... Mint Fudge" So, I went and looked at a bunch of generic fudge recipes and this is what I came up with!
Preparation Time: 20mins to make, Time to cool/set (I cooled in the freezer for 20 mins)
Ingredients
- 1 Can <300ml> Sweetened Condensed Milk
- 1 Bag <175g> Semi-Sweet Chocolate Chips (Bigger bag will work too)
- 2 tsp <10ml> Vanilla Extract
- 1 Box <175g> White Chocolate Squares (use all 6 squares in the box)
- 1 tbsp <15ml> Peppermint Extract
- 2-3 drops Green Food Coloring (OPTIONAL)
Directions
- Melt chocolate chips with 1 Cup <250ml> of condensed milk in a small sauce pot on medium-low heat.
- Once melted, stir in vanilla extract.
- In an 8x8inch <20x20cm> pan lined with wax paper, pour ½ the melted chocolate mixture.
- In a separate small sauce pot, melt the white chocolate with the remaining condensed milk. This mixture will be quite a bit thicker then the first.
- Once melted, stir in peppermint extract and food coloring.
- Pour peppermint mixture into pan, evenly covering the previous layer of chocolate.
- Allow peppermint layer to cool about 10 minutes.
- Re-heat the other ½ of the 1st chocolate mixture and then pour over, evenly covering, the peppermint layer.
- Allow to cool in fridge or freezer until very firm.
- Once cooled, trip and discard(eat) messy edges.
- Cut into small cubes and serve.
